Of the 14 farms around the country whose eggs were tested for this study, Ellwood's supplier, Polyface Farms in Swoope, VA, was determined to have some of the healthiest eggs. Vitamin E levels were almost double that of the other farms' eggs.
How to Buy and Store the Freshest Eggs
Choose eggs that feel heavy for their size. A heavy-feeling egg indicates that the egg white has a good volume. The older an egg gets the more the volume of the white decreases.
Look for the stamped date and buy the latest date.
While refrigerated eggs have a long shelf life (four months and possibly longer), fresh eggs will cook better. The egg white will be thicker and the membrane around the yolk will be stronger which decreases the chances that the yolk will break if you are poaching or frying.
Store eggs in their carton at 40 degrees in the coldest area of the refrigerator.
At the store, buy A or AA grade eggs and always be sure that the eggs you buy have been refrigerated before buying them.
